Character's are not locked to their Basic Path or Starting Class - as their levels grow their abilities grow too to represent their skillset and choice of profession.
Advanced Paths
When a Sith character reaches level 5 they leave their Basic Path behind and enter their Advanced Path. For a Sith this is the point where they leave their training behind and are fully inducted into Sith teachings and lore as a Sith Knight. A Sith character may choose to enter into one of the four traditional archetypes of Sith training: Sith Lord, Sith Marauder, Sith Assassin, or Sith Acolyte. Alternatively, a Sith apprentice may choose to enter into the traditions of one of the arcane groups allied with the New Sith Brotherhood: the Knights of Zakuul or the Krath Enchanters.
On entering their Advanced Path a character receives a bonus to two or three of their Saves (Reflex/Fortitude/Will) based on the Path's particular focus. The amount of HP and Force Well a character receives on level-up also changes depending on their Path.
While a Sith may enter any Advanced Path from any Basic Path, they may not change their Advanced Path at any time, or take levels in other Advanced Paths. Instead they progress to level 13, upon which they enter a Master Path dependent on their Advanced Path.
Prestige Classes
When a character in a Starting Class reaches level 7, they may begin taking levels in a selection of Prestige Classes. A Prestige Class is a highly specialised and highly potent profession that pushes one aspect of their skills to the maximum. Unlike an Advanced Path, an Operative's choice of Prestige Classes is determined by their Starting Class (as listed here); unlike an Advanced Path, an Operative may take levels in any or all of the Prestige Classes available to them, as well as continue levelling in their Starting Class. An Operative should plan their progression wisely, as though Starting and Prestige Classes learn extremely powerful abilities at their highest levels a character stops gaining benefits from their Class from level 17 onwards.
